This is a fantastic experiment. I have used it to reinforce a variety of different topics;

When a drop of water is added the two solids are able to get closer together. The following reaction occurs:

2 Al_(s) + 3 I_2(s) -------> 2 AlI_3(s)

This reaction is very exothermic and the heat generated causes the Iodine crystals to sublime.
